Blueberries & Sabayon

Blueberries & Sabayon

This decadent dessert is as beautiful as it is delicious. Top with a few edible flowers to really wow your party guests.

INGREDIENTS 

5 egg yolks

1/3 cup sugar

½ cup Meade

Juice from ½ lemon

2 pints of fresh Bow Hill blueberries

DIRECTIONS 

Fit a heat safe bowl over a pot of water. This is your bain marie or double boiler. Be sure that the bottom of your bowl is not touching the water; leave a few inches for the steam to gently heat the bowl once you turn on the heat to bring your water to a simmer. 

In your bain marie bowl, whisk together all the ingredients, excluding the blueberries and lemon, and set back atop your pot of water. Bring the water to a simmer while whisking the mixture constantly until thickened, about 5-10 minutes. The mixture should become the texture of loosely whipped cream. Add your lemon juice and whisk then remove from heat. Let cool slightly, or chill all the way if you are making in advance. 

Alternating layers, distribute blueberries amongst parfait glasses, or anything glass so you may see the layering, and spoon sabayon over the berries, repeat this process of layering until you fill your glass. Top with more blueberries and some whipped cream if you would.
