Blueberry Corn Salad
This is the best summer salad. It’s made even better when you buy local fresh ingredients!
2 ½ cups fresh corn cut off the cob
2 ½ cups fresh blueberries
3 tablespoons chives, chopped
2 tablespoons champagne vinegar
6 tablespoons grapeseed oil
Salt and pepper to taste
In a salad bowl add corn kernels, blueberries, chives, and mint. Combine. Circling measuring dishes while you add, mix in vinegar and oil. Lightly toss. Add salt and pepper, toss one final time and serve.
