Grown-Up Grilled Cheese
This elevated grilled cheese will change the way you think about the common comfort food. Move over, kraft singles and tomato soup, there's a new melty cheese game in town.
2 slices of artisan bread
1 tablespoon butter
1 teaspoon Dijon mustard
Handful of arugula
Thin slices of red onion, soaked in pickled blueberry brine
¼ cup Organic Pickled Heirloom Blueberries
4 ounces chèvre
Pinch of salt
Dash of pepper
Butter slices of artisan bread, placing one into a skillet heated to medium. Smear Dijon mustard and layer chèvre, pickled blueberries, onion slices, and arugula. Add salt and pepper to taste and drizzle with balsamic vinegar. Close the sandwich with the other slice of bread, butter side out.
Grill until golden brown, flip, and cook until berries squish and cheese melts.
Cut in half and devour.
