Grown Up Grilled Cheese
This elevated grilled cheese will change the way you think about the common comfort food. Move over, kraft singles and tomato soup, there's a new melty cheese game in town.
2 slices of artisan bread
1 Tbs butter
1 tsp Dijon mustard
Handful of arugula
Thin slices of red onion, soaked in pickled blueberry brine
1/4 cup pickled Bow Hill blueberries
4 oz chevre
Pinch of salt
Dash of pepper
Butter slices of artisan bread, placing one into a skillet heated to medium. Smear Dijon mustard, and layer chevre, pickled blueberries, onion slices and arugula. Decorate with salt and pepper. Drizzle with balsamic vinegar. Close the sandwich with the other slice of bread, butter side out. Grill until golden brown, flip, and cook until berries squish and cheese melts.
Cut in half and devour.
