Roasted Quail with Heirloom Powder and Blueberry Marinade

While we're making do with what's on hand, we're grateful to have found some remaining quail from Oak Meadows Farm up in Ferndale.

INGREDIENTS

Quail (or any poultry)

Olive oil

Rosemary sprigs

Organic Heirloom Blueberry Powder

Organic Blueberry Marinade & Salad Dressing

DIRECTIONS

Heat oven to 425°F.

Brush poultry with olive oil. 

Dust with blueberry powder.

Place a sprig of rosemary into the cavity of the bird.

Cook in oven until the internal temperature is 155°–160°F.

Remove from oven, then brush with blueberry marinade.

Serve as is, on a bed of greens, or whatever you have on hand.
