Blueberry Steel Cut Oats

Oats are a high fiber gluten-free grain that have the ability to reduce the risk of heart disease, lower blood sugar and help lose fat; all while tasting sweet and creamy. The best thing about combining two superfoods is that you get a super-superfood with the benefits of both. Here is our recipe for blueberry steel-cut oats — the best kind of oat.

INGREDIENTS

1 cup steel-cut oats

1 cup milk of choice — we use whole cow's milk

2 cups water

2 tablespoons Organic Heirloom Blueberry Powder

2 tablespoons Organic Dried Heirloom Blueberries or other dried fruit

½ teaspoon kosher salt

Cinnamon to taste

½ teaspoon vanilla

1 pat butter, optional

Splash of milk, optional

Chopped almonds, optional

Bow Hill Organic frozen blueberries, optional

DIRECTIONS

Combine oats, milk, water, salt, blueberry powder, dried blueberries/fruit, and cinnamon in a medium saucepan. Bring to a boil, then reduce heat to low. Simmer uncovered for 15 to 20 minutes until desired thickness, stirring occasionally. Remove from heat and let cool slightly.

Divide equally between four bowls (or save for the week's breakfasts). Add butter and slash of milk, if going that route. For extra nutrients, top with Bow Hill's organic frozen blueberries, more dried blueberries/fruit and organic almonds (now making it a super, super, superfood).

If time is an issue, make old-fashioned or quick oats. Just cook the oats as you normally would using the same ingredients, but subtracting half cup water or milk.
